Pesto & Mozzarella Stuffed Chicken Thighs

- Pre-heat the oven to 180c.
- Pat dry your chicken thighs with a paper towel and season with salt & pepper. If you like to add an extra boost of flavour, use a seasoning grinder with salt, pepper, garlic and chilli flakes.
- Lay the chicken thigh flat with the bottom side facing up. Spoon in a teaspoon of pesto and spread evenly.
- Cut your mozzarella into 4 equal pieces and place in the middle of the chicken.
- Carefully fold over the chicken and envelope the stuffing.
- Take 2 rashers of bacon and wrap around the chicken to hold the filling in place.
- In an oven proof dish, add in your tomatoes and olives. Feel free to add further veggies like artichoke hearts, capers, courgettes, peppers or anything that tickles your fancy.
- Place the wrapped chicken inside the oven proof dish then bake in the oven for 30-40 minutes. Until the chicken is fully cooked.
- Serve the chicken alongside pesto pasta. I'm using a low carb, high protein variety. Or with some green veggies. Garnish with fresh basil leaves and chilli flakes and dig in.
