Pesto & Mozzarella Stuffed Chicken Thighs

Juicy chicken thighs stuffed with pesto and mozzarella, wrapped in bacon and baked with cherry tomatoes and olives. A beautiful meal that packs flavour and comfort.

Ingredients

Instructions

  1. Pre-heat the oven to 180c.
  2. Pat dry your chicken thighs with a paper towel and season with salt & pepper. If you like to add an extra boost of flavour, use a seasoning grinder with salt, pepper, garlic and chilli flakes.
  3. Lay the chicken thigh flat with the bottom side facing up. Spoon in a teaspoon of pesto and spread evenly.
  4. Cut your mozzarella into 4 equal pieces and place in the middle of the chicken.
  5. Carefully fold over the chicken and envelope the stuffing.
  6. Take 2 rashers of bacon and wrap around the chicken to hold the filling in place.
  7. In an oven proof dish, add in your tomatoes and olives. Feel free to add further veggies like artichoke hearts, capers, courgettes, peppers or anything that tickles your fancy.
  8. Place the wrapped chicken inside the oven proof dish then bake in the oven for 30-40 minutes. Until the chicken is fully cooked.
  9. Serve the chicken alongside pesto pasta. I'm using a low carb, high protein variety. Or with some green veggies. Garnish with fresh basil leaves and chilli flakes and dig in.
