Cheesy Chicken Bruschetta

I am so excited to bring you this recipe in collaboration with iherb Singapore and Frontier Co-Op. This is a delicious summer recipe that you will want to have over and over again. An easy to make healthy recipe that can be enjoyed by the whole family.

Cheesey Chicken Bruschetta

A delicious summer recipe that will be loved by the whole family.

Ingredients

Instructions

  1. Drizzle olive oil over the chicken and season it with Herbs of Italy, Smoked Paprika, and salt.
  2. Cook the seasoned chicken in a hot pan until it turns nice and brown.
  3. Flip the chicken over for even cooking.
  4. Once fully cooked, top the chicken with mozzarella cheese and grill until the cheese melts into gooey deliciousness.
  5. In a bowl, mix diced tomatoes, fresh basil, onions, extra virgin olive oil, and red wine vinegar.
  6. Spoon the tomato mixture over the chicken.
  7. Finally, drizzle balsamic reduction over the dish, adding a touch of tangy sweetness.
  8. Serve with a green side salad or pesto pasta.

Notes

I've used boneless legs in this recipe, however any boneless cut can be used. If you prefer to use Chicken Breast, I would suggest flattening between cling film first.
