5 Minute Chilli, Cheese Eggs
In my opinion eggs are the ultimate fast food. Not only are they super easy to prepare, they are full of nutrients! These chilli, cheese eggs are incredibly delicious and take 5 minutes to make.
Just be careful not to burn your mouth, like I did. I have no patience!
The thing I hear time & time again, is that I don’t have time to cook / prepare / eat healthy. I say, where there’s a will there’s way.
You have to eat, so instead of opting for cereal or toast in the morning. Try this nutritious (and tasty) breakfast idea. It will keep you fuller for longer and stop you reaching for the pesky elevenses.
What you’ll need: A small jar or pot that is microwave safe
A lid (not metal) or a small bowl to cover the jar
2 eggs
2-3 tbsp of broth/stock
Pinch of salt
1 chilli (more or less depending on tolerance)
1/2 a spring onion
A few sprigs of coriander
1/2 cup of grated cheese
Garnish: Chilli & garlic sauce
1. Finely dice the chilli, spring onion & coriander
2. Grate the cheese
3. Crack the eggs into your jar, add the broth & some salt
4. Chuck in the remaining ingredients
5. Whisk well
6. Cover with a lid/bowl/plate (anything that is microwave safe)
7. And cook on high for 2 minutes (this may need to be adjusted depending on the power of your microwave)
8. Carefully remove from the microwave (you may need oven gloves)
9. Remove the cover, careful of the steam.
10. Top with some chilli & garlic sauce if you like
11. Dig in!

- Carefully remove from the microwave (you may need oven gloves)
- Remove the cover, careful of the steam.
- Top with some chilli & garlic sauce if you like
- Dig in!
