Herby Greek Yoghurt topped with Spicy Minced Lamb, 2 Soft Boiled Eggs, Feta and Chilli Butter.

A slight confession, but this was actually leftovers. I made Keema last night (check my stories if you wan the recipe) and after my gym session today, I wanted something filling and satisfying. So I threw this together.

I love coming up with ways to use up leftovers. Two different meals using up my minced lamb.

The longest part was cooking and peeling the eggs.

What you need to do:
2 eggs submerged in boiled water for 6 minutes.
Then placed in cold water for a minute before peeling

Herby Yoghurt
3-4 tbsp of Greek yoghurt
Handful of herbs - I used spring onion, dill & coriander
Seasoning: Salt, pepper, roasted cumin seeds

Mix it up and spread over a plate.

Lamb:
Bowl of left over spiced minced lamb (click here for the recipe)
Heat it up in the microwave for 2 minutes

Place on top of the yoghurt.
Then add your peeled eggs.

Crumble some feta over the plate.

Melt 1 tbsp of butter with 1 tbsp of chilli powder. Pour over the top of the eggs.

Garnish with some more of the herbs and red chilli peppers.

Watch in glee as you dig into that egg.

For The Eggs
  1. Place the eggs in bowling water for exactly 6 minutes
  2. Then drain and add to cold water for 1 minute
  3. Carefully peel the eggs
For the Yoghurt
  1. Finely chop the herbs
  2. Place the yoghurt in a bowl and carefully mix in most of the herbs (reserving some as a garnish).
  3. Add salt and pepper to taste.
For the Chilli Butter
  1. Melt the butter in a pan or microwave
  2. Add in the chilli powder and stir well.
To Assemble
  1. Warmup the lamb keema, either in a microwave or on the stove.
  2. Spread the yoghurt on a plate and top with the heated keema.
  3. Place the peeled eggs on top of the keema.
  4. Drizzle over the chilli butter.
  5. Garnish with the left over herbs & crumbled feta

Notes

This is a perfect way to use up any leftover Lamb Keema from the night before. If you wish to make a vegetarian version, skip the keema step.
