Berry Berry Cheesecake
A sweet & salty crunchy base, with a creamy center topped with vibrant berries to provide a perfect treat for the summer. This Keto-friendly cheesecake is a must try for any cheesecake lover.
I’m not a baker. Making desserts is quite an effort for me, so when I do try, I need simple and easy recipes. For starters I have very little patience. I can’t wait for the cooling period. Just let me eat it straight out of the oven!
Prior to my healthy eating days, I loved making no-bake cheesecakes, as they were very easy to make. This was my first time making a baked cheesecake and I have to say, this extra step gives the right structure and creaminess that is missing from the no-bake variety.
Ingredients
For the base:
1 cup almond flour
1/2 cup desiccated coconut
1 tbsp psyllium husk
3 tbsp golden sweetener
1/4 tsp salt
6 tbsp of melted butter
3/4 tsp of cinamon
For the Cheesecake:
2 blocks of cream cheese
3 eggs
1 cup of powdered sweetener
2 tsp vanilla extract
Topping:
Strawberries
Blackberries
Blueberries
Cherries
Basil

Preparation:
I recommend using a springform pan for this recipe like the one below.
You will also require a mixer, if you are fortunate enough to have a kitchen aid, this will work wonders. If like me you have an old school mixer, it also works, but may take a little longer. You don’t need to spend hundreds of dollars, the one below is just $25.
Method:
To start with, mix together all of the ingredients under base. Then press it firmly into the cake pan.
Bake this in the oven for 10 minutes and then leave to cool. While this is cooling, prepare the cheese mixture. Using a handheld electric whisk or mixer, mix the cream cheese (make sure this is already at room temperature) the sweetener & vanilla extract. Then start to add in the eggs, one at a time, allowing each one to be fully combined before cracking the next one. When you are done, you will be left with a smooth and creamy, batter like mixture.
Pour the mixture over the base and then place back in the oven for 50 minutes, until it has completely set.
Top the cheesecake with your favourite berries and enjoy.

- Mix all the ingredients together under crust and press into a baking pan.
- bake in a preheated oven at 180c for 10 minutes.
- Leave to cool.
- whisk together the cream cheese, sweetener & vanilla extract.
- Followed by one egg at a time until smooth.
- Pour the mixture over the crust and continue to bake for 50 minutes until set.
- Allow the cheesecake to cool then top with your favourite fruit.
