White Chocolate Coconut Truffles

To be honest, I wasn't planning on sharing this recipe. Because the truffles didn't look as pretty as I had wanted.

I posted a picture on my stories and I had quite a few of you asking for the recipe, so here it is.

Only 4 ingredients, super easy and incredibly delicious. Remember to hit SAVE on this one.

Ingredients

3 tbsp of coconut oil (reserve 1 tbsp for the white chocolate)
2 cups of desiccated coconut
1/2 can of sugar-free condensed milk
1 cup of sugar-free white chocolate


Method

1. Add 2 tbsp of coconut oil into a heated pan.
2. Followed by the desiccated coconut.
3. Allow it to toast slightly and be careful not to let it burn. This will only be for a couple of minutes.
4. Mix in the f sugar-free condensed milk. Leave it to cool, before using your hands to roll it into balls.
5. Place in the freezer for 10 - 15 minutes.
6. Now melt your sugar-free white chocolate, I used the Bain-Marie method, but you can do it in the microwave if you find it easier.
7. If the chocolate is a little lumpy, add in 1 tbsp of the coconut oil.
8. Carefully dip each ball into the chocolate and place on grease proof paper, then leave it to chill in the fridge.
9. Once the chocolate has solidified, enjoy these delicious balls of goodness.
