Nasi Kuning - Yellow Cauliflower Rice
Have you ever had Nasi Kuning? It’s an Indonesian yellow coconut rice and is absolutely delicious.
It has such an amazing aroma, that it will trick your senses into thinking it’s sweet, but it’s not. This is because it contains pandan. Pandan leaves are so aromatic and are often referred to as the Asian vanilla.
We had the cauliflower version of Nasi Kuning and it is the perfect accompaniment to a spicy baked chicken. Don’t forget to add a dollop of chilli sauce on top.

Nasi Kuning - Yellow Cauliflower Rice

Instructions
- In a saucepan add the coconut milk, ginger, lime leaves, pandan and turmeric.
- Carefully allow it to boil and then add in the cauliflower rice and stir well.
- Season with salt and keep stirring the cauliflower so as not to let it burn.
- Allow the cauliflower to cook and once most of the water has evapourated, turn off the heat and place a clean tea towel or kitchen towel over the top and cover with a lid. (This helps to absorb the steam).
- Serve with your favourite protein and chilli sauce.
Notes
I like to use frozen cauliflower as it is more convenient. However, should you wish to use fresh cauliflower, remember to squeeze out as much of the water as possible. You can do this using a cheese cloth or tea towel. This process helps to avoid mushy rice and helps with a fluffier texture.
