Blackened Salmon
A quick & easy recipe, that is perfect for a weeknight dinner.
Recently, I feel like I’m getting busier and busier. So dinner options are now becoming quicker and easier.
Long gone are the days when I would set aside an hour or two to prepare dinner. I’m now at the point where I have 30 minutes to get dinner ready and get the boys fed.
This recipe is perfect for a busy evening. Once the seasoning is ready, all you need to do is pan fry the salmon (or chuck it in the air fryer) and it’s done.
The boys had this salmon with rice and carrots. I had mine with cauliflower rice and some stir-fried greens.
Seasoning mix:
1 tsp smoked paprika
1 tsp chilli powder or cayenne powder
1 tsp oregano
1 tsp salt
1/4 tsp of black pepper
1/2 tsp of onion powder
1/2 tsp of garlic powder
1/2 tsp of cumin powder
For the salmon:
6 fillets of salmon (skin on)
1 tbsp of avocado oil
1-2 tbsp of butter
Squeeze of lemon
Method:
1. Mix all the spices for the seasoning mix in a bowl
2. Pat dry your salmon and drizzle over the avocado oil & the seasoning mix, until it is fully coated.
3. Melt some butter in a frying pan and place the salmon skin-side down
4. After 3-4 minutes flip it over and cook on the other side for a further 5-6 minutes until done
5. Squeeze over some lemon juice
6. Add a dollop of olive and lemon mayonnaise
7. Enjoy
