The Keto Roti
The low carb and keto friendly flat bread, that is soft and perfect as a side for Indian food.
I’ve been meaning to post this recipe for a while. The only problem is, making roti (even the traditional one) is a huge effort. Preparing the dough, kneading, letting it rest, preparing each dough ball, rolling it out and cooking it. Then there’s the issue of making 100s of roti’s as no one eats just one. In fact, most people will have two as standard, but I live in a house with all boys, who have BIG appetites so, you are looking at three to four per person. For this reason, I decided to invest in a roti maker. This helps to reduce the overall prep and cooking time and I have to say, it’s a game changer.
I’m not going to lie, my first attempt was a complete disaster. The roti, broke apart with the pressure of the machine and I thought it was a complete disaster. I tried again and I managed to get soft (almost round) keto rotis that work perfectly as a substitute for the real thing.
I don’t know if this is called cheating or being efficient, but anything that is going to save on time is a win for me. The roti maker, takes out the need to roll out each roti into a perfectly round shape, giving you delicious rotis in minutes. I usually set aside at least 30 minutes to make rotis (not including preparation of the dough). With the roti maker, I was able to make five rotis in 10 minutes, saving myself 20 minutes!
INGREDIENTS
1 cup of almond flour
1/2 tsp of xanthan gum
2 tbsp of psyllium husk
1 tbsp of avocado oil
1/2 cup of water
pinch of salt
The ingredients for the keto roti, is pretty standard for keto baking. If you have been following a keto lifestyle for a while, you should be familiar with all of the ingredients listed above.
Almond Flour
You can use almond flour or almond meal in this recipe. The almond meal will give it a “browner” colour similar to a whole-wheat roti. I would recommend using a super fine version, as this will give the roti a less grainy texture.
Xanthan gum
For those of you who are not familiar with xanthan gum, it is a food additive that is used to bind, thicken and stabilize ingredients. You’d be surprised to know, that it is added to a lot of prepackaged foods. I’m using it in this recipe as the almond flour doesn’t have any gluten, so this will help to bind the ingredients together.
Psyllium husk powder
Psyllium husk is a type of soluble fiber that moves through the digestive track without raising blood sugar levels. It is also a crucial ingredient in gluten free cooking as it will act as a binder and provide elasticity to the dough. You could always add egg instead of psyllium husk, but traditional roti doesn’t contain egg and it will change the taste and texture to being more like a crepe than roti.
The first step to make the keto roti is to prepare the dough. Luckily this method is super easy, all you need to do is chuck everything into a food processor and blitz it until a dough forms.
You then want to divide the dough into four/five equal pieces and roll them out into balls. Then gently flatten the balls with the palm of your hand until you have a flat disc shape.
Place it in the roti maker and quickly push down and release the lid to flatten the roti, then allow it cook for a couple of minutes on each side.
Once it’s ready, take it off the heat and spread over some butter while it’s still hot.
The Tava Method
If you will be making the roti in a traditional way, using the tava or a frying pan, you will need to roll out the rotis between two pieces of baking paper.
In order to get the round shape, cut around the rolled dough using a plate then carefully place it on a heated tava. Flipping it over after a minute or two, allowing both sides to cook evenly.
Once you notice small brown dots appear on both sides and the roti no longer has a raw look about it. Take it off the heat and add some butter while it is still hot. Serve with your favourite curry or subji.

- Add all ingredients into a food processor and combine on high until a dough forms.
- Divide the dough into 4 or 5 equal portions
- Roll into a ball and gently flatten to a disc shape.
- Carefully place the dough into the roti maker and quickly press down to flatten and shape the roti.
- Lift the lid and allow the roti to cook for a couple of minutes on each side until brown spots appear.
- Remove from the roti maker and add butter while it is still hot.
- Repeat for each roti.
- Then enjoy with your favourite curry or vegetable.
- Roll out the dough between two sheets of baking paper.
- Then cut around a plate to get a perfect round shape.
- Add the roti to a heated tava or frying pan.
- Flip over the roti after a minute or two and cook evenly on both sides, until brown spots appear.
- Repeat, with each roti.
- Remove from the tava and add butter while it is still hot.
- Then enjoy with your favourite curry or vegetable.
